Chop and prepare ingredients so they're ready for cooking
In a large pot, heat olive oil over medium-high heat.
Add onion and cook 3-4 minutes, until translucent. Add garlic and cook 30 seconds, until fragrant.
Add pork and cook 5-7 minutes, occasionally stirring to break up, until cooked through.
Add collard greens, apple cider vinegar, 1/2 cup water, chicken broth, and pinto beans. Bring to a boil then reduce heat to medium-low and simmer 25-35 minutes, until collards are tender.
Serve warm.
