Preheat oven to 400F. Grease a small casserole dish. Set aside.
Layout all of the ingredients from above.
In a skillet, heat olive oil over medium high heat. Add bell pepper and saute 4-minutes, stirring occasionally until tender. Add broccoli and cook another 1-2 minutes. Remove from heat and cool for 5 minutes.
In a medium mixing bowl, whisk greek yogurt and egg until smooth. Add cheddar and mix to combine.
Add chicken and broccoli mixture. Toss to coat.
Transfer mixture to the prepared casserole dish and spread into an even layer.
Transfer casserole to the oven and bake 20-25 minutes, until golden and bubbling.
Garnish with cilantro. Enjoy warm.
