In the bowl of a slow cooker, combine onion, enchilada sauce, corn, beans, quinoa, and 1/3 cup water. Stir to combine.
Crumble beef over top then stir to coat and spread into an even layer. Top with cheese.
Cover and cook on high for 4-5 hours.
