 1 cup Low sodium chicken broth
 3 tbsp Natural creamy peanut butter
 1 tsp Cumin
 1 tsp Dried coriander
 ½ tsp Ground ginger
 1 cup No salt added diced tomatoes
 12 oz boneless skinless chicken breasts, diced
 1 cup Chickpeas
 1 cup Baby spinach

In the bowl of a slow cooker, whisk broth, peanut butter, cumin, coriander, and ginger until smooth.

Add tomatoes, chicken, and chickpeas. Toss to coat.

Cover and cook 4-5 hours on high, until chicken is cooked through.

Remove cover and stir in spinach until wilted.
